Lime & Cumin Swai

Swai better than Tilapia. Marinate, yet from start to finish about an hour of your time


1/4 cup fresh lime juice
2 teaspoons cumin
6 Swai filles
1/2 teaspoon garlic powder and pepper
1 Tablespoon olive oil

1 can black beans drained and rinsed
2 cans pineapple or 3 cups fresh
1/4 cup chopped cilantro
2 Tablespoons fresh lime juice


Combine lime juice and cumin.
Place fish in a covered plastic container or zip lock bag.
Pour marinade over fish.
Refrigerate for 30 minutes.
Remove fish and sprinkle with pepper and garlic powder.
Heat 1/2 Tablespoon oil in pan cook fish at least 4 or 5 minutes each side.
It should flake easily with a fork.

Combine black beans, pineapple, cilantro and Lime juice.
Mix well, can be made ahead of time and chilled allowing flavors to marry.
Serve with fish and Enjoy!!!
